
There is a Turkish bakery around the corner of my school. They have quite good fresh Turkish bread. My favorite is bread with tasty potato inside and apple cookies. I tried so hard to remember the name of the apple cookie so I can browse it to get the recipe. So here we go
Ingredients:
For the skin:
- 1 egg
- 250gr margarine
- 250gr flour
- 2 tbs yogurt
- 2 tbs canola oil
- 2 tbs sugar
- 1 sachet baking powder
- sugar powder
For the filling:
- 3 Apples, peeled
- ¼ tsp cinnamon powder (originally 1 tsp, but I don’t really like cinnamon taste)
- Crushed walnut (optional, I don’t use it either)
- Sugar
Direction:
1. Mix all the ingredients except sugar powder, knead for around 5 minutes then cover the dough with a clean cloth and set aside.
2. Grate apples, cook it with sugar and cinnamon and then cook it for about 10 minutes over low-medium heat.
3. Cut the dough into 3 pieces and then flatten each doughs with a roller around 3mm thickness. Then cut it into 8 pieces like the photo below. Put 1 tsp filling on the wide side and roll it up.
4. Pre-heat oven to 180°C, use baking paper on the baking tray and bake the cookies around 30 minutes.
5. Pour sugar powder over the cookies when it’s done.
