Bakwan aka Bala-bala (Vegetable Fritters)

Bakwan or bala-bala (it’s just a different name in different regions) is a simple Indonesian vegetable fritters consisting of vegetables and batter. In this recipe I only use cabbage, carrots and green onions as vegetable but you can also use different vegetable such as bean sprouts or cauliflower.

In this recipe you can have around 20 bakwans.

Ingredients:

  • 300 gr cabbage, sliced
  • 3 carrots, peeled, shredded or julienne
  • 5 stalks of green onion, sliced
  • 2 shallots, thinly sliced
  • 2 cloves of garlic, thinly sliced
  • 1 tbs of coriander powder
  • 1 tsp of salt
  • 1 tsp of peppers
  • 350 gr of all purpose flour
  • 300 ml water
  • Enough oil to deep frying

How:

  1. Heat the oil
  2. Put cabbage, carrots and green onions in a bowl.
  3. Add salt, peppers and coriander powder, mix evenly
  4. Add the flour and water little by little. Keep in mind, if you want to have the bakwan crispy, don’t put too much flour and water. Just enough until the dough comes together. Not too runny not to dry either.
  5. When the oil is hot enough, scoop some batter using a spoon, about 4-5 scoops each time. Fry until both sides yellowish.
  6. Served while hot with sweet sauce sauce or birdeye chilies.
